One of the oldest cultivated plants, amaranth was part of the staple diet of the Aztec and Inca civilisations. This grain is rich in calcium, protein and fibre.
Add 200g of amaranth grain to 500ml boiling water and simmer for 35 minutes on low-medium heat. Stir, remove from heat and leave to stand for 15 minutes.
